Happy Labor Day from The Stewart Law Firm!

Hey Reader,

Labor Day is a time to relax, recharge, and celebrate the hard work and dedication of the American workforce. It's a day to honor the contributions of those who have built our country and continue to make it thrive. As we gather with friends and family for barbecues, parades, and other festivities, let's take a moment to reflect on the importance of this holiday and the value of every worker.

Tip of the Month: Don't Let Your Guard Down This Hurricane Season

Hurricane season is still in full swing, and it's important to remain vigilant even if we haven't seen a major storm yet. Take some time this week to:

  • Check your supplies: Make sure you have enough water, non-perishable food, batteries, and first-aid kits on hand.
  • Review your evacuation plan: Know where you'll go and how you'll get there if a hurricane threatens your area.
  • Secure your property: Trim trees, bring in loose objects, and reinforce windows and doors if necessary.
  • Stay informed: Monitor weather forecasts and heed any warnings from local authorities.

Hidden Gem Spotlight: Vaquero Taquero

If you're looking for authentic, flavorful tacos in Austin, look no further than Vaquero Taquero. Founded by two brothers with deep roots in the Rio Grande Valley and Monterrey, Mexico, Vaquero Taquero serves up mouthwatering tacos made with fresh, handmade tortillas and traditional recipes.

From their humble beginnings with a paleta push-cart to their current brick-and-mortar location in Hyde Park, Vaquero Taquero has stayed true to their mission of bringing a taste of Mexico to Austin.

Featured Recipe: Tex-Mex Beef Brisket Chili

Labor Day is the perfect time to enjoy a hearty chili with friends and family. Here's a Tex-Mex twist on a classic recipe:

Ingredients:

  • 3 pounds beef brisket, trimmed and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 (28-ounce) can crushed tomatoes
  • 1 (12-ounce) bottle dark beer
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can (15 ounces) pinto beans, drained and rinsed
  • 1 can (15 ounces) black beans, drained and rinsed
  • Toppings: shredded cheese, sour cream, chopped onions, cilantro

Instructions:

  1. Heat the olive oil in a large Dutch oven or pot over medium-high heat. Add the brisket and cook until browned on all sides.
  2. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Stir in the chili powder, cumin, paprika, and cayenne pepper (if using). Cook for 1 minute more.
  4. Add the crushed tomatoes, beer, beef broth, Worcestershire sauce, salt, and pepper. Bring to a boil, then reduce heat and simmer for 2-3 hours, or until the brisket is tender.
  5. Stir in the pinto beans and black beans and simmer for an additional 30 minutes.
  6. Serve hot with your favorite toppings.
